Smoked Honey Panna Cotta with Berry Compote

Ingredients
- 3 tbsp Segreti Bushfire Smoked Honey (plus extra for compote)
- 500ml pure cream
- 2 tsp gelatine powder dissolved in 2 tbsp warm water
- 1 tsp vanilla extract
- Pinch of salt
- 250g mixed berries (fresh or frozen)
- Juice of half a lemon
Method
- Gently warm cream, Segreti Smoked Honey, vanilla and salt in a saucepan, do not boil.
- Remove from heat and stir in dissolved gelatine until fully incorporated.
- Pour into 4 lightly oiled ramekins or glasses. Refrigerate for at least 4 hours or overnight.
- For the compote, simmer berries, 1 tbsp Segreti Smoked Honey and lemon juice in a small pan for 5 to 6 minutes until thickened. Cool.
- To serve, invert panna cotta onto plates (or serve in glasses) and spoon berry compote over the top.
